                                The Australian Embassy Cooking Competition

In November, the Australian Embassy in Thailand held the Australian Embassy Cooking Competition to showcase the finest Australian ingredients with the best of creative cooking in Thailand.

On 5 November Khun Apisit Jitprasong, a Thai culinary student, was declared as the winner for his use of prime Tasmanian salmon in a stunning dish of Red Curry Salmon Confit with Curry Potato.

The competition began back in July, when the Embassy held the first round of online competition. From overwhelming entrants, three finalists were shortlisted: Apisit Jitprasong, Atip Samosorn and Napassanun Chatchayaladasiri. The three amateur chefs were invited to the final cook-off at the Coffee Club, River Plaza using Tasmanian Salmon supplied by CP Foods as the main ingredient.

In a hotly contested final, Khun Apisit’s Red Curry Salmon Confit edged out the other contestants’ delicious dishes: Pad Thai Chaiya (Southern Thai Pad Thai) with spiced grilled salmon and Salmon Khao Soi (Northern Thai Curry Noodle).

The distinguished judges for the competition were:

  • H.E. Mr Allan McKinnon, Australian Ambassador to Thailand
  • Chef Ian Kittichai, Celebrity Chef and TV Personality
  • Mr James Bradbury, Head of Minor Food Innovation Team
  • Chef Chris Miller, Director of Food and Beverage at The Standard Bangkok Mahanakhon

Tasmanian salmon is considered a superfood, as it nutritious and raised in Tasmania’s pristine environment. It is well-loved by Australian and Thai people.

The Australian Ambassador to Thailand enjoyed the Australian-Thai fusion dishes and in his final remarks he said that “as an Australian, I am proud that Thai people are starting to show much greater interest in Australian cuisine.”
